Ingredients
Scale
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk (warm)
- 1 cup heavy cream (warm)
- 2 cups shredded white American cheese (or Velveeta, cubed)
- 1 cup shredded Monterey Jack cheese
- 1/4 cup diced green chilies (canned, mild or hot)
- 1/4 cup diced pickled jalapeños (optional for heat)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt to taste
- Chopped fresh cilantro (for garnish)
Instructions
Step 1: Melt butter in a medium saucepan over medium heat.
Step 2: Whisk in the flour and cook for 1-2 minutes to form a roux (this helps thicken the dip).
Step 3: Slowly add the warm milk and cream, whisking constantly to avoid lumps.
Step 4: Reduce heat to low and gradually stir in the shredded cheeses. Continue stirring until fully melted and smooth.
Step 5: Stir in the green chilies, jalapeños (if using), garlic powder, onion powder, and salt. Simmer for a few minutes to blend the flavors.
Step 6: Transfer to a serving bowl, garnish with chopped cilantro, and serve warm with tortilla chips.
