Ingredients for the Grits:

  • 1 cup stone-ground grits (not instant or quick-cook)
  • 4 cups water or chicken broth
  • 1 cup whole milk (optional for extra creaminess)
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1/2 cup shredded sharp cheddar cheese (optional, for cheesy grits)

Ingredients for the Shrimp:

  • 1 lb large raw shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning (or your favorite seasoning blend)
  • 1 tablespoon olive oil
  • 4 slices thick-cut bacon, chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 bell pepper, finely chopped
  • 1/2 cup chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Dash of hot sauce (optional)

Instructions

Step 1: Prepare the Grits

  1. In a medium saucepan, bring water (or broth) and salt to a boil.
  2. Slowly whisk in the grits, reducing heat to low.
  3. Stir constantly for the first few minutes to avoid clumping.
  4. Simmer gently for 20–25 minutes, stirring occasionally, until thick and creamy.
  5. Add milk, butter, and cheddar cheese (if using), stirring until smooth and luscious.

Step 2: Marinate the Shrimp

  1. In a bowl, toss the peeled shrimp with Cajun seasoning, olive oil, and a dash of salt.
  2. Let the shrimp sit for 10–15 minutes to absorb the flavors.

Step 3: Cook the Bacon

  1. In a skillet over medium heat, cook chopped bacon until crispy.
  2. Remove bacon bits with a slotted spoon and set aside on a paper towel.
  3. Leave about 2 tablespoons of bacon fat in the pan for extra flavor.

Step 4: Sauté the Aromatics

  1. In the bacon fat, sauté onions, garlic, and bell pepper until soft and fragrant (about 3–4 minutes).

Step 5: Cook the Shrimp and Make the Sauce

  1. Add seasoned shrimp to the skillet and cook for 2–3 minutes per side, until pink and opaque.
  2. Stir in lemon juice, chicken broth, and hot sauce.
  3. Simmer for another 2–3 minutes to blend flavors.
  4. Sprinkle the cooked bacon and chopped parsley over the shrimp.
