Ingredients for the Shrimp:

Instructions
Step 1: Prepare the Grits
- In a medium saucepan, bring water (or broth) and salt to a boil.
- Slowly whisk in the grits, reducing heat to low.
- Stir constantly for the first few minutes to avoid clumping.
- Simmer gently for 20–25 minutes, stirring occasionally, until thick and creamy.
- Add milk, butter, and cheddar cheese (if using), stirring until smooth and luscious.
Step 2: Marinate the Shrimp
- In a bowl, toss the peeled shrimp with Cajun seasoning, olive oil, and a dash of salt.
- Let the shrimp sit for 10–15 minutes to absorb the flavors.
Step 3: Cook the Bacon
- In a skillet over medium heat, cook chopped bacon until crispy.
- Remove bacon bits with a slotted spoon and set aside on a paper towel.
- Leave about 2 tablespoons of bacon fat in the pan for extra flavor.
Step 4: Sauté the Aromatics
- In the bacon fat, sauté onions, garlic, and bell pepper until soft and fragrant (about 3–4 minutes).
Step 5: Cook the Shrimp and Make the Sauce
- Add seasoned shrimp to the skillet and cook for 2–3 minutes per side, until pink and opaque.
- Stir in lemon juice, chicken broth, and hot sauce.
- Simmer for another 2–3 minutes to blend flavors.
- Sprinkle the cooked bacon and chopped parsley over the shrimp.
