  • 2 cups cooked, shredded chicken (grilled or boiled)
  • 2 ripe avocados, mashed
  • 1/4 cup Greek yogurt or mayonnaise
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1 tablespoon lemon or lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (optional)
  • 1 tablespoon olive oil (optional)

Instructions

Step 1: Prepare the Chicken

If you haven’t cooked your chicken yet, boil or grill it until fully cooked. Let it cool, then shred it into bite-sized pieces.

Step 2: Mash the Avocados

Peel and remove the pits from the avocados. Place them in a large mixing bowl and mash them using a fork or potato masher until smooth.

Step 3: Mix in the Dressing

Add Greek yogurt or mayonnaise, lemon juice, salt, black pepper, garlic powder, and paprika to the mashed avocado. Stir well to combine.

Step 4: Add Vegetables

Toss in the chopped red onion, cherry tomatoes, cucumber, and fresh cilantro or parsley. Mix everything together.

Step 5: Fold in the Chicken

Gently fold the shredded chicken into the avocado mixture until everything is evenly coated.

Step 6: Adjust Seasoning

Taste the salad and adjust seasoning if needed. If you prefer a creamier texture, add more Greek yogurt or mayo.

Step 7: Serve

Serve immediately as a sandwich filling, on lettuce wraps, or with crackers for a refreshing, healthy meal.
