For the Chicken:

  • 500g boneless chicken breast (cut into slider-sized portions)
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

For the Bang Bang Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce (adjust to taste)
  • 1 tablespoon honey
  • Juice of half a lime

For the Sliders:

  • 8 slider buns
  • Lettuce leaves
  • Pickles (optional)
  • Shredded cabbage or coleslaw mix

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, mix buttermilk, garlic powder, smoked paprika, salt, and pepper.
  2. Add the chicken pieces and let them marinate for at least 30 minutes (or up to 4 hours in the fridge).

Step 2: Prepare the Coating

  1. In one shallow dish, place flour.
  2. In a second dish, beat 2 eggs.
  3. In a third dish, combine panko breadcrumbs with a pinch of salt and pepper.

Step 3: Coat the Chicken

  1. Remove the chicken from the marinade.
  2. Dip each piece into the flour, then the beaten egg, and finally the breadcrumb mixture, pressing gently to coat well.

Step 4: Fry the Chicken

  1. Heat oil in a deep frying pan to 350°F (175°C).
  2. Fry the coated chicken pieces in batches for 4-5 minutes until golden brown and cooked through.
  3. Drain on a paper towel-lined plate.

Step 5: Make the Bang Bang Sauce

  1. In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice until smooth.

Step 6: Assemble the Sliders

  1. Toast the slider buns lightly for added flavor and texture.
  2. Spread a generous amount of Bang Bang sauce on the bottom bun.
  3. Add lettuce, fried chicken, and optional toppings like pickles or coleslaw.
  4. Drizzle more Bang Bang sauce on top, cover with the top bun, and serve!
