Instructions

Step 1: Prepare the Meat Mixture

In a large mixing bowl, combine the ground beef, chopped onions, minced garlic, fresh parsley, and all the spices. Add the olive oil and lemon juice for extra moisture and flavor. Mix everything well using your hands or a wooden spoon until fully combined.

Step 2: Shape the Kofta

Divide the mixture into equal portions and shape them into oval logs or cylindrical kebabs. If using skewers, mold the meat around them firmly to ensure they hold together while cooking. If not using skewers, shape them into small patties or elongated logs.

Step 3: Chill the Kofta

For the best texture, refrigerate the kofta for at least 30 minutes before cooking. This helps the flavors meld together and keeps the meat firm.

Step 4: Cook the Kofta

  • Grilling: Preheat your grill to medium-high heat and lightly oil the grates. Grill the kofta for about 4-5 minutes per side until they are charred on the outside and cooked through.
  • Pan-Frying: Heat a tablespoon of olive oil in a pan over medium heat. Cook the kofta for 5-6 minutes per side until browned and fully cooked.
  • Baking: Preheat your oven to 400°F (200°C). Arrange the kofta on a baking sheet lined with parchment paper and bake for 18-20 minutes, flipping halfway.

Step 5: Serve and Enjoy
