Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes (optional for spice)
  • 2 cups cooked pasta (elbow macaroni, penne, or rotini)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/2 cup ricotta cheese (optional for creaminess)
  • 1 tbsp olive oil
  • 1/2 cup beef broth
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add pasta and cook according to the package instructions until al dente.
  • Drain and set aside.

Step 2: Cook the Ground Beef

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced onion and garlic, and sauté for 2-3 minutes until fragrant.
  • Add the ground beef and cook until browned, breaking it up with a spatula.
  • Drain excess grease if needed.

Step 3: Prepare the Sauce

  • Add the diced tomatoes, tomato sauce, beef broth, and seasonings (Italian seasoning, salt, black pepper, paprika, red pepper flakes) to the cooked beef.
  • Stir well and let the mixture simmer for 10 minutes to blend the flavors.

Step 4: Assemble the Casserole

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the cooked pasta, sour cream, ricotta cheese, and half of the shredded cheese.
  • Add the beef mixture and stir until everything is well coated.
  • Transfer the mixture to a greased 9×13-inch baking dish.

Step 5: Bake

  • Sprinkle the remaining cheddar and mozzarella cheese on top.
  • Cover with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for another 10 minutes until the cheese is melted and bubbly.
  • Remove from the oven and let it rest for 5 minutes before serving.
