Best Homemade Burger Patties

  • Author: Skyar
  • Total Time: 20 minutes

Ingredients

Scale
  • 1 lb (450g) ground beef (80/20 fat ratio for juiciness)
  • ½ cup breadcrumbs (optional for texture)
  • 1 egg (helps bind the ingredients)
  • 1 tbsp Worcestershire sauce (adds umami flavor)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp mustard (optional, for extra depth)
  • 1 tbsp ketchup (adds slight sweetness)

Instructions

Step 1: Choose the Right Beef

The best burgers start with high-quality ground beef. Opt for an 80/20 blend (80% lean meat, 20% fat) for a juicy, flavorful patty. If you prefer leaner meat, add a little olive oil or butter to prevent dryness.

Step 2: Mix the Ingredients

In a large bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, salt, pepper, garlic powder, onion powder, mustard, and ketchup. Use your hands or a fork to mix until well combined. Be careful not to overmix, as this can make the patties tough.

Step 3: Shape the Patties

Divide the meat mixture into equal portions (about 4-6 depending on size). Shape each portion into a round, flat patty, about ¾ inch thick. Press a small indent in the center with your thumb—this prevents the patty from puffing up while cooking.

Step 4: Chill the Patties

Place the patties on a tray lined with parchment paper and refrigerate for at least 30 minutes. This helps them hold their shape during cooking.

Step 5: Cook the Patties

  • On the Grill: Preheat the grill to medium-high heat. Cook the patties for 3-4 minutes per side for medium doneness, flipping only once.
  • On the Stovetop: Heat a cast-iron skillet over medium-high heat. Add a bit of oil and cook the patties for about 3-4 minutes per side.

Step 6: Check for Doneness

Use a meat thermometer to ensure the internal temperature reaches:

  • Rare: 120-125°F (49-52°C)
  • Medium-Rare: 130-135°F (54-57°C)
  • Medium: 140-145°F (60-63°C)
  • Well-Done: 160°F (71°C)

Step 7: Let the Patties Rest

Once cooked, transfer the patties to a plate and let them rest for 5 minutes to allow the juices to redistribute.
