For the Hamburger Steaks:

  • 1 lb ground beef (80/20 blend recommended)
  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1 tbsp oil (for frying)

For the Brown Gravy:

  • 2 tbsp butter
  • 1 small onion, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme (optional)

Instructions

Step 1: Prepare the Hamburger Patties

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, egg, minced garlic, Worcestershire sauce, salt, black pepper, smoked paprika, and onion powder.
  2. Mix everything together until well combined but do not overmix, as it may make the patties tough.
  3. Divide the mixture into 4 equal portions and shape them into oval or round patties about 1/2-inch thick.

Step 2: Cook the Hamburger Steaks

  1. Heat a tablespoon of oil in a large skillet over medium-high heat.
  2. Add the hamburger patties and cook for about 4–5 minutes per side, or until they develop a deep brown crust.
  3. Remove the patties from the skillet and set them aside on a plate while you prepare the gravy.

Step 3: Make the Brown Gravy

  1. Reduce the heat to medium and melt the butter in the same skillet.
  2. Add the sliced onions and cook until they become soft and caramelized, about 5 minutes.
  3. Sprinkle the flour over the onions and stir continuously for 1 minute to remove the raw flour taste.
  4. Slowly pour in the beef broth while whisking to prevent lumps.
  5. Add Worcestershire sauce, garlic powder, salt, black pepper, and thyme. Stir to combine.
  6. Let the gravy simmer for about 5 minutes until it thickens.

Step 4: Simmer the Patties in Gravy

  1. Return the hamburger steaks to the skillet, spooning some gravy over the top.
  2. Reduce the heat to low and let them simmer for 10 minutes, allowing the flavors to blend together.

Step 5: Serve and Enjoy

  1. Remove the skillet from heat and let it rest for a few minutes.
  2. Serve hot with mashed potatoes, rice, or roasted vegetables.
