Ingredients
Scale
For the peach filling:
- 6–8 fresh peaches (or 4 cups canned/frozen peaches, drained)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 2 teaspoons cornstarch
For the cobbler topping:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
Step 1: Prepare the Peaches
- If using fresh peaches, peel, pit, and slice them.
- In a mixing bowl, combine the peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss well and let it sit for about 10 minutes to release the juices.
Step 2: Preheat the Oven and Prepare the Baking Dish
- Preheat your oven to 375°F (190°C).
- Pour the melted butter into the baking dish, spreading it evenly.
Step 3: Prepare the Batter
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
- Gradually add the milk and vanilla extract, stirring until a smooth batter forms.
Step 4: Assemble the Cobbler
- Pour the batter evenly over the melted butter. Do not stir.
- Spoon the peach mixture evenly over the batter. Again, do not stir—this will create a perfect cobbler crust as it bakes.
Step 5: Bake the Cobbler
- Place the dish in the preheated oven and bake for 40-45 minutes, or until the crust is golden brown and the peaches are bubbling.
- Let it cool slightly before serving.
