For the Biscuits:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 6 tablespoons cold unsalted butter, cubed
- 3/4 cup buttermilk
For the Sausage Gravy:
- 1 pound breakfast sausage (mild or spicy)
- 3 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 1/2 cups whole milk (or more for desired consistency)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon crushed red pepper flakes (optional, for heat)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.
Step 2: Prepare the Biscuit Dough
- In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
- Add the cold butter cubes and cut them into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Pour in the buttermilk and mix gently until the dough comes together. Avoid overmixing.
Step 3: Roll and Cut Biscuits
- Turn the dough out onto a lightly floured surface and gently knead it a few times.
- Roll out the dough to about 3/4-inch thickness.
- Use a biscuit cutter or a round glass to cut out biscuits and place them on the prepared baking sheet.
- Bake for 12-15 minutes, or until golden brown.
Step 4: Make the Sausage Gravy
- In a large skillet over medium heat, cook the sausage, breaking it into crumbles until browned and fully cooked.
- Remove excess grease, leaving about 1 tablespoon in the pan.
- Add butter to the skillet and stir until melted.
- Sprinkle the flour over the sausage and stir continuously for 1-2 minutes to cook the raw flour taste out.
- Gradually pour in the milk, whisking constantly to prevent lumps.
- Continue stirring until the gravy thickens (about 5-7 minutes).
- Season with salt, black pepper, garlic powder, and red pepper flakes if using.
Step 5: Serve
- Split a warm biscuit in half.
- Pour a generous amount of sausage gravy over the biscuit.
- Serve immediately and enjoy!
