For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • 3/4 cup buttermilk

For the Sausage Gravy:

  • 1 pound breakfast sausage (mild or spicy)
  • 3 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk (or more for desired consistency)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon crushed red pepper flakes (optional, for heat)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.

Step 2: Prepare the Biscuit Dough

  1. In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  2. Add the cold butter cubes and cut them into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Pour in the buttermilk and mix gently until the dough comes together. Avoid overmixing.

Step 3: Roll and Cut Biscuits

  1. Turn the dough out onto a lightly floured surface and gently knead it a few times.
  2. Roll out the dough to about 3/4-inch thickness.
  3. Use a biscuit cutter or a round glass to cut out biscuits and place them on the prepared baking sheet.
  4. Bake for 12-15 minutes, or until golden brown.

Step 4: Make the Sausage Gravy

  1. In a large skillet over medium heat, cook the sausage, breaking it into crumbles until browned and fully cooked.
  2. Remove excess grease, leaving about 1 tablespoon in the pan.
  3. Add butter to the skillet and stir until melted.
  4. Sprinkle the flour over the sausage and stir continuously for 1-2 minutes to cook the raw flour taste out.
  5. Gradually pour in the milk, whisking constantly to prevent lumps.
  6. Continue stirring until the gravy thickens (about 5-7 minutes).
  7. Season with salt, black pepper, garlic powder, and red pepper flakes if using.

Step 5: Serve

  1. Split a warm biscuit in half.
  2. Pour a generous amount of sausage gravy over the biscuit.
  3. Serve immediately and enjoy!
