Instructions
Step 1: Prepare the Chicken
Start by patting the chicken breasts dry with paper towels. In a small bowl, combine olive oil, garlic powder, onion powder, Italian seasoning, salt, pepper, and paprika. Rub this seasoning mixture evenly over both sides of each chicken breast.
Step 2: Cook the Chicken
Grilling Option:
Preheat your grill or grill pan over medium heat. Grill the chicken for 5–7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Set aside to rest for 5 minutes.
Baking Option:
Preheat oven to 400°F (200°C). Place the seasoned chicken on a baking sheet and bake for 20–25 minutes or until cooked through.
Step 3: Make the Bruschetta Topping
While the chicken is cooking, combine the diced tomatoes, basil, minced garlic, red onion, olive oil, salt, pepper, and a dash of balsamic vinegar in a bowl. Toss gently to combine. Let it sit for a few minutes to let the flavors marry.
Step 4: Prepare the Balsamic Glaze
In a small saucepan, bring balsamic vinegar and honey (or sugar) to a simmer over medium heat. Stir occasionally and reduce until thickened, about 8–10 minutes. Remove from heat and set aside to cool.
