Ingredients
- 1 lb (450g) sirloin or ribeye steak, cut into bite-sized pieces
- 2 medium sweet potatoes, peeled and diced into small cubes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 1/4 cup fresh parsley, chopped (for garnish)
- Optional: sour cream or ranch dressing for dipping
Instructions
Step 1: Prepare the sweet potatoes.
Preheat your oven to 400°F (200°C). In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them evenly on a baking sheet lined with parchment paper, making sure the pieces are not overcrowded.
Step 2: Roast the sweet potatoes.
Place the baking sheet in the preheated oven and roast the sweet potatoes for 20-25 minutes, or until they’re tender and golden brown, stirring once halfway through for even cooking. Once done, remove from the oven and set aside.
Step 3: Cook the steak.
While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the steak pieces to the skillet and cook for about 4-5 minutes, turning occasionally until they’re browned on all sides and cooked to your desired doneness. Add the minced garlic in the last minute of cooking and sauté it until fragrant.
Step 4: Combine the steak and sweet potatoes.
Once both the steak and sweet potatoes are cooked, add the sweet potatoes to the skillet with the steak. Stir well to combine, ensuring the garlic from the steak coats the sweet potatoes.
Step 5: Melt the cheese.
Sprinkle the shredded cheddar cheese evenly over the steak and sweet potato mixture. Reduce the heat to low, cover the skillet, and let the cheese melt for 2-3 minutes until gooey and delicious.
