Instructions

Step 1: Prepare the Chicken
Pat the chicken thighs dry with paper towels to remove excess moisture. This step is crucial for getting crispy skin.

Step 2: Marinate the Chicken
In a large bowl, mix olive oil, salt, pepper, garlic powder, onion powder, smoked paprika, oregano, cayenne (if using), lemon juice, minced garlic, and soy sauce. Coat the chicken thighs evenly with this marinade and let them sit for at least 30 minutes or overnight for the best flavor.

Step 3: Preheat the Cooking Surface

  • If baking, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • If pan-searing, heat a cast-iron skillet over medium-high heat and add a tablespoon of oil.
