Ingredients
For the Stir Fry:
- 2 boneless, skinless chicken breasts (sliced into thin strips)
- 1 tablespoon vegetable oil (or sesame oil)
- 1 cup broccoli florets
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 carrot (julienned)
- 1 zucchini (sliced)
- Β½ cup snap peas
- 3 cloves garlic (minced)
- 1-inch ginger (grated)
- 2 green onions (chopped)
- Β½ teaspoon salt
- ΒΌ teaspoon black pepper
For the Stir Fry Sauce:
- ΒΌ cup soy sauce (low sodium)
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 tablespoon honey (or brown sugar)
- 1 teaspoon cornstarch (mixed with 2 tablespoons water)
- Β½ teaspoon red pepper flakes (optional)
Instructions
Step 1: Prepare the Ingredients
Slice the chicken into thin strips and season with a pinch of salt and pepper.
Chop all vegetables into bite-sized pieces to ensure even cooking.
In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, honey, and cornstarch slurry. Set aside.
Step 2: Cook the Chicken
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
Add the sliced chicken and cook for 4β5 minutes until golden brown and fully cooked. Remove from the pan and set aside.
Step 3: SautΓ© the Vegetables
In the same pan, add a little more oil if needed.
Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
Add the harder vegetables first (carrots, bell peppers, and broccoli). Stir fry for 3β4 minutes.
Add the zucchini, snap peas, and green onions, and cook for another 2β3 minutes.
Step 4: Add the Sauce & Chicken
Return the cooked chicken to the pan with the vegetables.
Pour the prepared stir fry sauce over the mixture.
Toss everything together and cook for another 2 minutes until the sauce thickens and coats the chicken and vegetables evenly.
Step 5: Serve & Enjoy
Remove from heat and garnish with extra green onions or sesame seeds.
Serve immediately over steamed rice, noodles, or enjoy on its own.
