For the Salad:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup black olives, sliced (optional)

For the Dressing:

  • 3 tbsp olive oil
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste

Instructions

Step 1: Prepare the Ingredients

  • Wash and chop all the vegetables. Drain and rinse the chickpeas thoroughly.

Step 2: Mix the Salad Ingredients

  • In a large mixing bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, feta cheese, parsley, and black olives (if using).

Step 3: Prepare the Dressing

  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and black pepper.

Step 4: Combine Everything

  • Pour the dressing over the salad and toss gently to coat all ingredients evenly.
