  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Toppings:

  • 1 avocado or guacamole
  • 1 cup shredded lettuce
  • 1/2 cup chopped tomatoes or pico de gallo
  • 1/4 cup chopped red onions
  • 1/4 cup shredded cheese (cheddar or Monterey Jack)
  • Fresh cilantro (optional)
  • Sour cream or Greek yogurt (optional)
  • Lime wedges

Instructions

Step 1: Cook the Rice

Cook rice according to package instructions. For more flavor, cook it in vegetable or chicken broth and add a splash of lime juice and chopped cilantro.

Step 2: Season and Cook the Chicken

Rub chicken with olive oil, then season with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Grill or pan-sear the chicken for 5-7 minutes per side or until fully cooked. Let it rest for 5 minutes before slicing.
