  • 8 oz rotini or fusilli pasta
  • 1/2 lb summer sausage, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/2 cup cheddar cheese, cubed
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup Italian dressing (or more to taste)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. In a large bowl, combine the cooked pasta, diced summer sausage, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, cheddar cheese, and fresh parsley.
  3. Drizzle the Italian dressing and olive oil over the salad. Toss everything together until well combined.
  4. Season with salt and pepper to taste.
  5. Chill the pasta salad in the fridge for at least 30 minutes before serving to allow the flavors to meld together.
