- 1/2 lb summer sausage, diced

- 1/2 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 1/2 cup cheddar cheese, cubed
- 1/4 cup fresh parsley, chopped
- 1/3 cup Italian dressing (or more to taste)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large bowl, combine the cooked pasta, diced summer sausage, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, cheddar cheese, and fresh parsley.
- Drizzle the Italian dressing and olive oil over the salad. Toss everything together until well combined.
