Instructions
Step 1: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin or silicone mold with cooking spray or butter.
Step 2: In a mixing bowl, whisk together the eggs, cottage cheese, and milk until smooth. For a super creamy texture, blend the mixture in a blender until fully combined.
Step 3: Add shredded cheese, salt, black pepper, garlic powder, onion powder, and baking powder to the mixture. Stir well.
Step 4: If using, fold in cooked bacon, ham, spinach, or bell peppers.
Step 5: Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
Step 6: Bake for 18-22 minutes, or until the egg bites are set and slightly golden on top.
Step 7: Let them cool for 5 minutes before removing from the muffin tin. Serve warm or store for later use.
