  • 1 can (4 oz) diced green chilies
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 810 flour tortillas (or corn tortillas for a gluten-free option)
  • Fresh cilantro, chopped (for garnish)
  • 1/4 cup green onions, sliced (for garnish)

Instructions

  1. Step 1: Preheat the Oven : Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or a thin layer of oil.
  2. Step 2: Prepare the Filling : In a large mixing bowl, combine the shredded chicken, softened cream cheese, sour cream, diced green chilies, garlic powder, cumin, chili powder, paprika, salt, and pepper. Mix until everything is well combined and creamy.
  3. Step 3: Assemble the Enchiladas : Lay a tortilla flat on a clean surface. Spoon about 1/4 cup of the chicken mixture onto the center of the tortilla. Sprinkle a little shredded cheddar and Monterey Jack cheese on top. Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
  4. Step 4: Add the Enchilada Sauce : Pour the enchilada sauce evenly over the rolled tortillas in the baking dish. Make sure all the enchiladas are covered with the sauce. Sprinkle the remaining shredded cheese on top.
