Creamy Buffalo Chicken Pasta – Spicy, Cheesy & Delicious!

For the Chicken & Pasta:

  • 2 boneless, skinless chicken breasts (diced)
  • 2 cups pasta (penne, rotini, or your choice)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

For the Buffalo Sauce:

  • ½ cup buffalo sauce (like Frank’s RedHot)
  • 2 tablespoons butter
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce (optional, for extra heat)
  • ½ teaspoon smoked paprika

For the Creamy Cheese Sauce:

  • 1 cup heavy cream
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup cream cheese
  • 1 teaspoon garlic powder

For Garnish:

  • ¼ cup chopped green onions
  • ¼ cup crumbled blue cheese or ranch dressing
  • Chopped parsley (optional)

Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook the pasta according to the package instructions until al dente.
  • Drain and set aside.

Step 2: Cook the Chicken

  • In a large skillet, heat olive oil over medium heat.
  • Season diced chicken with salt, pepper, garlic powder, and onion powder.
  • Add chicken to the skillet and cook for about 5-7 minutes, until fully cooked and golden brown.
  • Remove from heat and set aside.

Step 3: Make the Buffalo Sauce

  • In the same skillet, melt butter over low heat.
  • Stir in buffalo sauce, Worcestershire sauce, hot sauce (if using), and smoked paprika.
  • Simmer for 2 minutes, stirring occasionally.

Step 4: Prepare the Cheese Sauce

  • Reduce heat to low and pour in heavy cream and milk.
  • Stir in cheddar cheese, mozzarella cheese, and cream cheese.
  • Whisk until the cheese is fully melted and the sauce is smooth.
  • Add garlic powder and mix well.

Step 5: Combine Everything

  • Add the cooked chicken to the sauce and mix well.
  • Toss in the cooked pasta, stirring to coat evenly with the creamy buffalo sauce.
  • Simmer for 2-3 minutes to let the flavors blend.

Step 6: Garnish & Serve

  • Remove from heat and sprinkle with green onions, crumbled blue cheese, or ranch dressing.
  • Serve hot and enjoy!
