For the Pasta:
- 12 oz (340g) spaghetti or fettuccine
- Salt (for boiling water)
For the Chicken and Sauce:
- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 6 oz (170g) bacon or pancetta (chopped)
- 3 large eggs
- 1 cup (100g) grated Parmesan cheese
- 1/2 cup heavy cream (optional for extra creaminess)
- 2 cloves garlic (minced)
- 1 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley (for garnish)
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add spaghetti or fettuccine and cook according to the package instructions until al dente.
- Reserve 1 cup of pasta water before draining.
- Drain the pasta and set it aside.
Step 2: Cook the Bacon and Chicken
- Heat a large skillet over medium heat and add the chopped bacon.
- Cook until crispy, then remove and place on a paper towel-lined plate.
- In the same pan, add olive oil and butter.
- Add the chicken pieces, season with salt and pepper, and cook until golden brown and fully cooked.
- Remove the chicken and set aside.
Step 3: Prepare the Sauce
- In a mixing bowl, whisk together eggs, Parmesan cheese, and black pepper.
- If using, add heavy cream to the mixture and whisk until smooth.
Step 4: Combine Everything
- Reduce heat to low and return pasta to the pan.
- Quickly pour the egg mixture over the pasta while tossing constantly to create a creamy sauce.
- Add in the cooked chicken and bacon, stirring well to combine.
- If needed, add reserved pasta water a little at a time to loosen the sauce.
Step 5: Serve and Enjoy
- Garnish with fresh parsley and additional Parmesan cheese.
