For the Pasta:

  • 12 oz (340g) spaghetti or fettuccine
  • Salt (for boiling water)

For the Chicken and Sauce:

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 6 oz (170g) bacon or pancetta (chopped)
  • 3 large eggs
  • 1 cup (100g) grated Parmesan cheese
  • 1/2 cup heavy cream (optional for extra creaminess)
  • 2 cloves garlic (minced)
  • 1 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley (for garnish)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add spaghetti or fettuccine and cook according to the package instructions until al dente.
  3. Reserve 1 cup of pasta water before draining.
  4. Drain the pasta and set it aside.

Step 2: Cook the Bacon and Chicken

  1. Heat a large skillet over medium heat and add the chopped bacon.
  2. Cook until crispy, then remove and place on a paper towel-lined plate.
  3. In the same pan, add olive oil and butter.
  4. Add the chicken pieces, season with salt and pepper, and cook until golden brown and fully cooked.
  5. Remove the chicken and set aside.

Step 3: Prepare the Sauce

  1. In a mixing bowl, whisk together eggs, Parmesan cheese, and black pepper.
  2. If using, add heavy cream to the mixture and whisk until smooth.

Step 4: Combine Everything

  1. Reduce heat to low and return pasta to the pan.
  2. Quickly pour the egg mixture over the pasta while tossing constantly to create a creamy sauce.
  3. Add in the cooked chicken and bacon, stirring well to combine.
  4. If needed, add reserved pasta water a little at a time to loosen the sauce.

Step 5: Serve and Enjoy

  1. Garnish with fresh parsley and additional Parmesan cheese.
  2. Serve immediately and enjoy your creamy Chicken Carbonara Pasta!
