  • 1.5 lbs boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 (8 oz) block cream cheese, softened
  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 12 oz (340g) penne or your favorite pasta
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions

  1. Place the chicken breasts in the Crockpot. Add chicken broth, garlic powder, onion powder, paprika, salt, and black pepper. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  2. Once the chicken is fully cooked, remove it from the Crockpot and shred it using two forks. Return the shredded chicken to the Crockpot.
  3. Add the softened cream cheese, grated Parmesan cheese, and olive oil to the Crockpot. Stir until the cheeses are fully melted and combined into a creamy sauce.
  4. Cook the pasta according to package instructions until al dente. Drain and add the pasta to the Crockpot, mixing well to coat the pasta with the sauce and chicken.
  5. Let everything cook together on low for 10-15 minutes to allow the flavors to meld. Garnish with fresh parsley if desired, and serve warm.

Notes

  1. Soften the cream cheese beforehand to ensure it melts smoothly into the sauce.
  2. For a thicker sauce, reduce the amount of chicken broth slightly.
  3. If the sauce becomes too thick, stir in a splash of milk or additional broth.
