Ingredients
Scale
- 2 Β½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- Β½ tsp ground nutmeg
- ΒΌ tsp ground ginger
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 cup pumpkin puree (for pumpkin cookies)
- 1 cup chopped nuts (pecans or walnuts, optional)
- Β½ cup chocolate chips (optional for pumpkin or apple cinnamon variations)
- 1 apple, peeled and diced (for apple cinnamon cookies)
- Β½ cup rolled oats (for apple cinnamon variation)
Instructions
- Step 1: Preheat your oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper or silicone mats to prevent sticking.
- Step 2: In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
- Step 3: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. You can use an electric mixer or a stand mixer for this step.
- Step 4: Beat in the egg and vanilla extract, mixing until fully combined. For pumpkin cookies, fold in the pumpkin puree at this stage for a rich, moist texture.
- Step 5: Gradually add the dry ingredients to the butter-sugar mixture, stirring until just combined. If you’re making apple cinnamon cookies, fold in the diced apple, oats, and optional nuts at this point. For pumpkin cookies, you can add chocolate chips if desired.
- Step 6: Drop rounded tablespoonfuls of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Step 7: Bake for 10-12 minutes or until the edges are golden brown and the center of the cookies is set. Adjust baking time depending on your oven and cookie size.
- Step 8: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
