Ingredients
- 2 cups cooked chicken, shredded
- 1 can (15 oz) of refried beans
- 1 can (10 oz) of diced tomatoes with green chilies
- 1 packet taco seasoning mix
- 8 small flour tortillas, cut into strips
- 1 cup corn kernels (frozen or canned)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
Step 1: Prepare the Oven and Baking Dish
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with a little olive oil or cooking spray to prevent sticking.
Step 2: Cook the Chicken
In a large pan over medium heat, cook your chicken until fully cooked (if not already cooked). You can use rotisserie chicken to save time. Shred the chicken once it’s cooked, and set it aside.
Step 3: Mix the Casserole Ingredients
In a large mixing bowl, combine the shredded chicken, refried beans, diced tomatoes with green chilies, taco seasoning mix, corn kernels, sour cream, chili powder, garlic powder, and salt & pepper. Stir everything together until it’s well mixed.
Step 4: Assemble the Casserole
Layer the bottom of your prepared baking dish with a portion of the tortilla strips. Spread half of the chicken mixture on top of the tortillas. Sprinkle with a portion of both cheeses. Repeat the layering with the remaining tortilla strips, chicken mixture, and top with the remaining cheese.
Step 5: Bake the Casserole
Cover the casserole with aluminum foil and bake it in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly. The casserole should be golden and slightly crisp on top.
