Ingredients
- 4 large croissants (fresh or day-old, sliced in half)
- 4 large eggs
- 1/4 cup milk (optional, for fluffier eggs)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon butter or cooking spray
- 4 slices of cheese (cheddar, Swiss, or American work well)
- 4 slices of cooked bacon or ham
- 1/4 cup spinach or arugula (optional, for extra freshness)
- 1/2 avocado, sliced (optional, for a creamy texture)
Instructions
Step 1: Prepare the Croissants
Preheat your oven to 350°F (175°C). Slice the croissants in half and place them on a baking sheet. Toast them for about 5 minutes until they’re lightly crispy. This enhances their texture and prevents sogginess when adding the fillings.
Step 2: Cook the Eggs
Crack the eggs into a bowl, add milk, salt, and pepper, then whisk until well combined. Heat butter in a non-stick skillet over medium-low heat. Pour in the egg mixture and stir gently with a spatula until soft and scrambled. Remove from heat before they become too dry.
Step 3: Cook the Bacon or Ham
If using bacon, cook it in a skillet over medium heat until crispy, then transfer to a paper towel to drain excess grease. If using ham, warm it in a skillet for about 1-2 minutes per side.
Step 4: Assemble the Sandwiches
Place a slice of cheese on the bottom half of each toasted croissant. Add scrambled eggs, then bacon or ham. If using avocado or greens, add them now. Top with the other half of the croissant.
Step 5: Melt the Cheese
Place the assembled sandwiches back in the oven for 3-5 minutes or until the cheese melts. Serve immediately while warm and delicious!
