  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Freshly ground black pepper
  • Optional: red pepper flakes, balsamic vinegar, fresh herbs (parsley, thyme, rosemary)
  • Optional Garnishes:
  • Lemon wedges
  • Vegan parmesan or crumbled feta
  • Tahini sauce or garlic aioli
  • Toasted seeds or nuts (like sunflower or pine nuts)

Instructions

Step 1: Prep the Cabbage

  1. Remove any loose or wilted outer leaves from the cabbage.
  2. Cut off the stem end slightly to stabilize it, but keep the core intact so the slices hold together.
  3. Slice the cabbage into 1 to 1.5-inch thick rounds (you should get about 4–6 steaks depending on the size).

Step 2: Preheat and Prepare the Grill

  1. Heat your grill to medium-high (around 375–400°F / 190–200°C).
  2. Lightly oil the grates to prevent sticking.

Step 3: Season the Steaks

  1. In a bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper.
  2. Brush both sides of each cabbage steak generously with the mixture.

Step 4: Grill the Cabbage

  1. Place cabbage steaks directly on the grill grates.
  2. Grill for 5–7 minutes on each side, or until nicely charred and tender.
  3. If you prefer a softer texture, cover them with foil as they grill.

Step 5: Garnish and Serve

  1. Once done, transfer to a serving platter.
  2. Drizzle with lemon juice or balsamic glaze.
  3. Sprinkle with herbs, cheese, or your favorite toppings.
