  • 2 cups vegetable broth or chicken broth
  • 1/2 cup heavy cream (optional for added richness)
  • 1 teaspoon soy sauce or tamari
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Step 1:
    In a large skillet, melt the butter and olive oil over medium heat. Add the finely chopped onion and cook until softened, about 3–4 minutes.
  2. Step 2:
    Stir in the minced garlic and cook for 1 minute, until fragrant.
  3. Step 3:
    Add the sliced mushrooms to the skillet. Sauté for 7–8 minutes, stirring occasionally, until the mushrooms release their moisture and turn golden brown.
  4. Step 4:
    Sprinkle the flour over the mushrooms and stir well to coat them evenly. Cook for 2–3 minutes to remove the raw flour taste.

    Slowly pour in the vegetable broth while stirring continuously to avoid lumps. Add the soy sauce, dried thyme, black pepper, and salt. Bring the mixture to a gentle simmer.
  6. Step 6:
    If desired, stir in the heavy cream for a richer texture. Simmer for an additional 5–7 minutes, or until the gravy thickens to your preferred consistency.
  7. Step 7:
    Taste and adjust seasoning as needed. Garnish with fresh parsley before serving.
