  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (optional)
  • 1 cup beef broth
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano (optional)
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil or butter
  • ½ cup shredded cheese (optional, for topping)
  • Fresh parsley for garnish

Instructions

Step 1: Prepare the Ingredients

  • Wash, peel, and dice the potatoes into small cubes.
  • Chop the onion and mince the garlic.
  • If using canned tomatoes, drain excess liquid.

Step 2: Cook the Ground Beef

  • Heat a large skillet over medium heat and add 1 tablespoon of olive oil or butter.
  • Add the ground beef and cook until browned, breaking it apart with a spoon.
  • Drain any excess fat if needed.

Step 3: Sauté the Aromatics

  • Add chopped onions and minced garlic to the skillet.
  • Sauté for 2–3 minutes until onions are soft and translucent.

Step 4: Add Potatoes and Seasonings

  • Stir in the diced potatoes, salt, black pepper, paprika, garlic powder, onion powder, and oregano.
  • Mix well so the potatoes absorb the flavors.

Step 5: Add Liquid and Simmer

  • Pour in beef broth and canned tomatoes (if using). Stir to combine.
  • Cover the skillet and let it simmer for 15–20 minutes, stirring occasionally, until the potatoes are tender.
  • If the liquid reduces too quickly, add more broth or water.

Step 6: Final Touches

  • Taste and adjust seasoning if needed.
  • If using cheese, sprinkle it over the dish and let it melt.
  • Garnish with fresh parsley before serving.
