  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Shrimp

  • Heat a skillet over medium-high heat.
  • Add a tablespoon of olive oil.
  • Season shrimp with salt and pepper.
  • Cook for 2-3 minutes per side until pink and opaque.
  • Remove from heat and let cool slightly.

Step 2: Prepare the Vegetables

  • Dice avocados and cucumbers.
  • Slice cherry tomatoes in half.
  • Thinly slice the red onion.
  • Chop fresh cilantro or parsley.

Step 3: Make the Dressing

  • In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, garlic powder, salt, and pepper.
