For the Burritos:
- 8 large flour tortillas
- 8 large eggs
- ½ cup milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon butter or oil (for cooking eggs)
- 1 cup shredded cheddar cheese (or cheese of choice)
- 1 cup cooked breakfast sausage, crumbled (or bacon, ham, or turkey)
- 1 cup diced potatoes or hash browns (optional)
- ½ cup bell peppers, diced
- ½ cup onions, diced
- ½ teaspoon garlic powder
- ½ teaspoon paprika
Optional Toppings & Add-ins:
- Hot sauce or salsa
- Avocado slices (add when serving, not before freezing)
- Spinach or kale
- Black beans
- Sour cream (add when serving)
Instructions
Step 1: Prepare the Ingredients
- If using potatoes or hash browns, cook them in a pan with a little oil until golden brown and crispy. Set aside.
- Dice bell peppers and onions, then sauté them over medium heat until soft.
Step 2: Cook the Eggs
- In a bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and paprika.
- Heat butter or oil in a pan over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are soft and scrambled. Remove from heat.
Step 3: Cook the Protein
- If using sausage, cook it in a skillet until browned. Drain excess grease.
- If using bacon, cook until crispy, then chop into small pieces.
Step 4: Assemble the Burritos
- Lay out the tortillas and evenly divide the eggs, cheese, cooked sausage (or protein of choice), sautéed veggies, and potatoes onto each tortilla.
- Fold in the sides, then roll up the burritos tightly.
Step 5: Wrap & Freeze
- Wrap each burrito individually in foil or plastic wrap.
- Place them in a freezer-safe bag or container and store for up to 3 months.
