For the Burritos:

  • 8 large flour tortillas
  • 8 large eggs
  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon butter or oil (for cooking eggs)
  • 1 cup shredded cheddar cheese (or cheese of choice)
  • 1 cup cooked breakfast sausage, crumbled (or bacon, ham, or turkey)
  • 1 cup diced potatoes or hash browns (optional)
  • ½ cup bell peppers, diced
  • ½ cup onions, diced
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika

Optional Toppings & Add-ins:

  • Hot sauce or salsa
  • Avocado slices (add when serving, not before freezing)
  • Spinach or kale
  • Black beans
  • Sour cream (add when serving)

Instructions

Step 1: Prepare the Ingredients

  • If using potatoes or hash browns, cook them in a pan with a little oil until golden brown and crispy. Set aside.
  • Dice bell peppers and onions, then sauté them over medium heat until soft.

Step 2: Cook the Eggs

  • In a bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and paprika.
  • Heat butter or oil in a pan over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are soft and scrambled. Remove from heat.

Step 3: Cook the Protein

  • If using sausage, cook it in a skillet until browned. Drain excess grease.
  • If using bacon, cook until crispy, then chop into small pieces.

Step 4: Assemble the Burritos

  • Lay out the tortillas and evenly divide the eggs, cheese, cooked sausage (or protein of choice), sautéed veggies, and potatoes onto each tortilla.
  • Fold in the sides, then roll up the burritos tightly.

Step 5: Wrap & Freeze

  • Wrap each burrito individually in foil or plastic wrap.
  • Place them in a freezer-safe bag or container and store for up to 3 months.
