Ingredients
Scale
- 1 lb (450g) ground beef (80/20 blend for best flavor)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 oz (225g) mushrooms, sliced (button or cremini work well)
- 2 tablespoons olive oil or butter
- 2 tablespoons all-purpose flour
- 2 cups beef broth (low-sodium preferred)
- 1 cup sour cream (full-fat for creaminess)
- 1 tablespoon Dijon mustard (optional, for tanginess)
- 1 teaspoon Worcestershire sauce
- 1 teaspoon paprika (smoked or sweet)
- Salt and black pepper, to taste
- 12 oz (340g) egg noodles or rice, for serving
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Egg Noodles
- Bring a large pot of salted water to a boil.
- Add the egg noodles and cook according to package instructions until al dente.
- Drain and set aside.
Step 2: Brown the Ground Beef
- Heat a large skillet or Dutch oven over medium-high heat.
- Add the ground beef and cook until browned, breaking it into small pieces with a wooden spoon.
- Once cooked, remove the beef from the skillet and set aside. Drain excess fat if needed.
Step 3: Sauté the Vegetables
- In the same skillet, add olive oil or butter.
- Sauté the chopped onion until translucent (about 3-4 minutes).
- Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and golden (5-7 minutes).
Step 4: Make the Sauce
- Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually pour in the beef broth, stirring constantly to avoid lumps.
- Add the paprika, Worcestershire sauce, Dijon mustard (if using), salt, and pepper. Bring to a simmer and let the sauce thicken slightly.
Step 5: Combine and Finish
- Return the cooked ground beef to the skillet and stir to combine.
- Reduce the heat to low and stir in the sour cream until the sauce is creamy and well-incorporated.
- Taste and adjust seasoning if needed.
