Ingredients
- 1 lb ground beef (80/20 or lean)
- 3 large potatoes, diced
- 1 medium onion, chopped
- 1 green bell pepper, diced (optional)
- 2 cloves garlic, minced
- 1 cup beef broth (or water)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried thyme (optional)
- 1 tablespoon Worcestershire sauce
- 2 tablespoons olive oil or butter
- 1 cup shredded cheddar cheese (optional)
- Chopped parsley for garnish
Instructions
Step 1: Cook the Ground Beef
Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks. Drain excess fat if needed and set the beef aside.
Step 2: Sauté the Vegetables
In the same skillet, add olive oil or butter. Toss in the chopped onion, bell pepper, and garlic. Sauté for 3-4 minutes until the onions become translucent and fragrant.
Step 3: Add the Potatoes
Add the diced potatoes to the skillet. Stir well to coat them in the oil and seasonings. Cook for about 5 minutes, stirring occasionally, to get a slight crisp on the potatoes.
Step 4: Simmer with Broth
Pour in the beef broth and Worcestershire sauce. Stir everything together and reduce the heat to medium-low. Cover and let the mixture simmer for 15-20 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.
Step 5: Combine & Serve
Once the potatoes are soft, return the cooked ground beef to the skillet. Stir everything together and let it cook for another 5 minutes. If using cheese, sprinkle it on top and let it melt before serving. Garnish with chopped parsley and serve hot!
