Ingredients
Scale
- 1 lb (450g) ground beef
- 4 medium potatoes, diced
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 cup beef broth
- 1 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/4 cup chopped parsley (optional, for garnish)
Instructions
- Prepare Ingredients: Wash and dice the potatoes, chop the onion, and mince the garlic.
- Cook the Ground Beef: Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks. Drain excess fat and set aside.
- Sauté Vegetables: In the same skillet, heat olive oil over medium heat. Add the onions and garlic, cooking until fragrant and softened, about 3 minutes.
- Add Potatoes: Stir in the diced potatoes, paprika, cumin, thyme, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Simmer with Broth: Pour in the beef broth, cover, and let it simmer for 15–20 minutes, or until the potatoes are tender and the liquid has reduced.
- Combine Beef and Potatoes: Return the cooked ground beef to the skillet and stir to combine. Cook for an additional 5 minutes to meld the flavors.
- Garnish and Serve: Sprinkle with chopped parsley if desired and serve warm.
