Ingredients
For the Maple Muffins:
- 1 1/2 cups all-purpose flour
- 1 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 egg
- 1 1/4 cups milk
- 2 tbsp maple syrup (plus more for serving)
- 2 tbsp melted butter
- 1/2 tsp vanilla extract
For the Filling:
- 4 sausage patties (pork or turkey)
- 4 eggs
- 4 slices of American cheese or cheddar
- Salt and pepper, to taste
Optional Maple Syrup Glaze:
- 1/4 cup maple syrup
- 1 tbsp brown sugar
- 1/2 tbsp butter
Instructions
Step 1: Prepare the Maple Muffin Batter In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk the egg, milk, melted butter, maple syrup, and vanilla extract. Gradually combine the wet ingredients with the dry ingredients until just blended.
Step 2: Cook the Maple Muffins Heat your skillet over medium heat and lightly grease it. Place muffin rings on the skillet and fill them halfway with the batter. Cook for about 3-4 minutes on each side, until golden brown and cooked through. Remove and set aside.
Step 3: Cook the Sausage Patties Using the same skillet, cook the sausage patties until browned and cooked through, about 4-5 minutes per side. Set aside.
Step 4: Scramble the Eggs Whisk the eggs in a bowl with a pinch of salt and pepper. Pour into a non-stick skillet over medium heat. Stir gently until fluffy and cooked. Shape them into round patties to fit the muffins.
Step 5: Assemble the McGriddle Muffins Place a slice of cheese on the bottom muffin. Add the egg, followed by the sausage patty. Drizzle a bit of optional maple syrup glaze if desired. Top with the second muffin and serve warm.
