For the Salad:

  • 2 cups fresh spinach or mixed greens
  • 1 cup sliced strawberries
  • 1 cup orange segments (or mandarin oranges)
  • ½ cup sliced red bell pepper
  • ¼ cup thinly sliced red onion
  • ¼ cup toasted almonds or pecans
  • ¼ cup crumbled feta or goat cheese (optional)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Step 1: Prepare the Ingredients

Wash and dry the spinach or mixed greens. Slice the strawberries, red bell pepper, and red onion. Peel and segment the orange.

Step 2: Make the Dressing

In a small bowl, whisk together olive oil, orange juice, lemon juice, honey, Dijon mustard, salt, and black pepper until well combined.

Step 3: Assemble the Salad

In a large mixing bowl, add the greens, strawberries, orange segments, red bell pepper, and red onion. Toss gently to combine.

Step 4: Add Toppings

Sprinkle the toasted almonds or pecans and crumbled feta or goat cheese over the salad.

Step 5: Drizzle the Dressing & Serve

Pour the dressing over the salad and toss gently to coat all the ingredients. Serve immediately and enjoy!
