- 2 large eggs, lightly beaten
- 2 tablespoons fresh parsley, chopped
- Optional: A squeeze of lemon juice for brightness
Instructions
Step 1: Prepare the Shrimp
Start by peeling, deveining, and chopping the shrimp into bite-sized pieces if they are large. If using frozen shrimp, thaw completely and pat dry with a paper towel.
Step 2: Sauté the Aromatics
In a medium skillet, melt butter over medium heat. Add onions, celery, and red bell pepper. Cook for 4–5 minutes until softened. Stir in the garlic and cook for another minute until fragrant.
Add the shrimp to the skillet and season with Old Bay, paprika, cayenne, salt, and black pepper. Cook just until shrimp turn pink—about 2–3 minutes. Do not overcook. Remove from heat and let cool slightly.
Step 4: Create the Creamy Base
Sprinkle the flour over the shrimp mixture and stir to combine. Gradually add milk and heavy cream, stirring constantly to avoid lumps. Cook for 2–3 minutes until thickened slightly. Remove from heat and mix in cheeses, beaten eggs, and chopped parsley.
Step 5: Assemble and Bake
Pour the shrimp filling into the prepared pie crust. Smooth the top with a spatula. Bake in a preheated oven at 375°F (190°C) for 35–40 minutes or until the pie is golden and set in the center. Let rest for 10 minutes before slicing.
