  • 1/2 lb sliced Genoa salami, chopped

  • 1/2 lb provolone cheese, diced
  • 1/2 cup banana peppers, sliced
  • 1/2 red onion, finely diced
  • 1 cup cherry tomatoes, quartered
  • 1 cup iceberg lettuce, shredded
  • 1/2 cup mayonnaise
  • 1 tbsp red wine vinegar
  • 1 tbsp Italian seasoning
  • Salt and black pepper to taste
  • Optional: crushed red pepper flakes for heat
  • To serve: hoagie rolls, baguette slices, crackers, or chips

Instructions

Step 1: Chop all deli meats (salami, ham, capicola) into bite-sized pieces. Place in a large bowl.

Step 2: Add diced provolone cheese to the meat mixture. This brings a creamy, tangy balance to the salty meats.

Step 3: Add the vegetables: banana peppers, finely chopped red onion, shredded lettuce, and cherry tomatoes.

Step 4: In a small bowl, whisk together mayonnaise, red wine vinegar, Italian seasoning, salt, and black pepper. For extra kick, stir in crushed red pepper flakes.

Step 5: Pour the dressing over the meat and veggie mix. Stir well to combine. Chill for at least 30 minutes for best flavor.

Step 6 (Optional): Serve on a platter surrounded by toasted hoagie slices or scoop with crunchy crackers.
