Chicken Marinade Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Parmesan Crust Ingredients:

  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup Provolone cheese, shredded
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons butter, melted
  • 2 tablespoons mayonnaise
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder

Instructions

Step 1: Prepare the Chicken Marinade

  1. In a mixing bowl, combine olive oil, lemon juice, garlic powder, onion powder, paprika, salt, and black pepper.
  2. Place the chicken breasts in a ziplock bag or shallow dish and pour the marinade over them.
  3. Let the chicken marinate for at least 30 minutes (for best results, marinate for 2-4 hours in the refrigerator).

Step 2: Grill the Chicken

  1. Preheat your grill or grill pan to medium-high heat.
  2. Remove the chicken from the marinade and place it on the grill.
  3. Cook for 5-6 minutes on each side, until the internal temperature reaches 165°F (74°C).
  4. Transfer the grilled chicken to a baking sheet lined with foil.

Step 3: Prepare the Parmesan Crust

  1. In a bowl, mix the grated Parmesan, shredded Provolone, panko breadcrumbs, melted butter, mayonnaise, Italian seasoning, and garlic powder.
  2. Stir until the ingredients are well combined and form a thick paste.

Step 4: Add the Parmesan Crust to the Chicken

  1. Spread the Parmesan crust mixture evenly over each grilled chicken breast.
  2. Press down gently to help it adhere.
