Ingredients
For the Salad:
- 2 cups cooked pasta (penne, rotini, or fusilli)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup chopped fresh parsley
For the Dressing:
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp dried oregano
- Salt and black pepper to taste
Instructions
Step 1: Cook the pasta
Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta.
Step 2: Prepare the vegetables
While the pasta cools, chop the cucumbers, tomatoes, red onion, and parsley. Slice the olives and set everything aside.
Step 3: Make the dressing
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and black pepper. Adjust seasoning as needed.
Step 4: Combine ingredients
In a large mixing bowl, add the cooled pasta, chopped vegetables, olives, and crumbled feta cheese. Drizzle the dressing over the salad and toss gently to combine all ingredients.
Step 5: Chill and serve
Let the salad sit in the refrigerator for at least 30 minutes to allow the flavors to blend. Serve chilled and enjoy!
