Ingredients
Scale
- 8 oz (225 g) pasta (penne or fusilli)
- 1 lb (450 g) chicken breast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 cup chicken broth
- 1 cup bell peppers, sliced (any color)
- 1 cup broccoli florets
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.
- In the same pot, add minced garlic and sauté for about 1 minute until fragrant. Then, add honey, soy sauce, and red pepper flakes, stirring to combine.
- Pour in the chicken broth and bring the mixture to a boil. Add the pasta and stir well. Reduce the heat to a simmer, cover, and cook for about 10 minutes, or until the pasta is al dente, stirring occasionally.
- After 10 minutes, add the sliced bell peppers and broccoli florets to the pot. Stir to combine and cook for an additional 5 minutes, or until the vegetables are tender and the pasta has absorbed most of the liquid.
- Return the cooked chicken to the pot and mix everything together. Adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with fresh parsley.
Notes
- For a milder version, reduce the red pepper flakes or omit them entirely.
- Swap broccoli with spinach or zucchini for variety.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
