  • 8 oz (225 g) pasta (penne or fusilli)
  • 1 lb (450 g) chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.
  2. In the same pot, add minced garlic and sauté for about 1 minute until fragrant. Then, add honey, soy sauce, and red pepper flakes, stirring to combine.
  3. Pour in the chicken broth and bring the mixture to a boil. Add the pasta and stir well. Reduce the heat to a simmer, cover, and cook for about 10 minutes, or until the pasta is al dente, stirring occasionally.
  4. After 10 minutes, add the sliced bell peppers and broccoli florets to the pot. Stir to combine and cook for an additional 5 minutes, or until the vegetables are tender and the pasta has absorbed most of the liquid.
  5. Return the cooked chicken to the pot and mix everything together. Adjust seasoning with salt and pepper if needed.
  6. Serve hot, garnished with fresh parsley.

  • For a milder version, reduce the red pepper flakes or omit them entirely.
  • Swap broccoli with spinach or zucchini for variety.
