- 4 cod fillets
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1/4 cup Kalamata olives, sliced
- 1/4 cup sun-dried tomatoes, chopped
- 1 tablespoon capers
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the cod fillets with salt, pepper, oregano, and thyme.
- Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork.
- Remove the cod from the skillet and set aside. In the same skillet, add the garlic, sun-dried tomatoes, Kalamata olives, and capers. Sauté for 2 minutes, until fragrant.
- Squeeze the lemon juice over the mixture and stir to combine. Return the cod fillets to the skillet and spoon the Mediterranean sauce over the fish.
- Cook for another 2 minutes to allow the flavors to meld together.
- Garnish with fresh parsley and serve immediately.
