  • 4 cod fillets
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tablespoon capers
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the cod fillets with salt, pepper, oregano, and thyme.
  2. Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork.
  3. Remove the cod from the skillet and set aside. In the same skillet, add the garlic, sun-dried tomatoes, Kalamata olives, and capers. Sauté for 2 minutes, until fragrant.
  4. Squeeze the lemon juice over the mixture and stir to combine. Return the cod fillets to the skillet and spoon the Mediterranean sauce over the fish.
  5. Cook for another 2 minutes to allow the flavors to meld together.
  6. Garnish with fresh parsley and serve immediately.
