Ingredients
- 2 cups sharp cheddar cheese, freshly grated
- 1 cup white cheddar cheese, freshly grated
- ½ cup mayonnaise (Duke’s or Hellmann’s recommended)
- ½ cup diced pimentos, drained
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper (optional, for a little heat)
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt, or to taste
- ¼ teaspoon black pepper, or to taste
- 1 tablespoon cream cheese (optional, for extra creaminess)
Instructions
Step 1: Grate the Cheese
For the best texture and flavor, avoid pre-shredded cheese. Instead, grate fresh sharp and white cheddar cheese using a grater.
Step 2: Mix the Base
In a large mixing bowl, combine the mayonnaise, cream cheese (if using), Worcestershire sauce, Dijon mustard, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir well to ensure even mixing.
Step 3: Add the Cheese
Gently fold in the freshly grated cheeses, making sure everything is well combined but not overly mixed.
Step 4: Add the Pimentos
Drain the pimentos well and gently stir them into the mixture. They should be evenly distributed but not broken apart.
Step 5: Adjust the Consistency
If you prefer a smoother texture, use a hand mixer to blend the cheese mixture. For a chunkier spread, simply stir until everything is combined.
Step 6: Chill and Serve
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
