  • 2/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup finely chopped pistachios
  • A pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or silicone mats.
Step 2: In a large mixing bowl, cream together the softened butter and powdered sugar using an electric mixer on medium speed. Beat until light and fluffy.
Step 3: Add the vanilla extract and a pinch of salt, mixing until incorporated.
Step 4: Gradually add the flour to the butter mixture, mixing until combined. Once the dough starts to come together, add in the chopped pistachios and fold them in until evenly distributed.
Step 5: Scoop out tablespoon-sized portions of dough and roll them into small balls. Place them on the prepared baking sheet, spaced about 1 inch apart.
Step 6: Bake the cookies for 12-15 minutes or until they are lightly golden on the edges. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Step 7: Once the cookies are completely cool, dust them with powdered sugar for an elegant finish.
