Instructions
Step 1: Optional – Brown the Beef Tips
While optional, browning the beef tips before placing them in the crockpot adds a rich, caramelized flavor that enhances the dish. Heat olive oil in a skillet over medium-high heat. Sear the beef cubes in batches until they have a golden-brown crust. Transfer them to the slow cooker.
Step 2: Add Ingredients to the Crockpot
Add the chopped onion, beef broth, Worcestershire sauce, garlic powder, onion powder, salt, pepper, thyme, and paprika over the beef tips in the crockpot. Stir gently to combine the flavors.
Step 3: Slow Cook Until Tender
Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours, until the beef is fork-tender and juicy.
Step 4: Make the Gravy Slurry
About 30 minutes before serving, whisk together the cornstarch and water in a small bowl to create a slurry. Stir this into the crockpot, cover, and let it cook on high for the remaining 30 minutes to allow the gravy to thicken.
