Ingredients
- 1 lb fresh shrimp, peeled and deveined
- 1 lb smoked sausage (or andouille sausage), sliced
- 4 cups fresh or frozen okra, sliced
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes with juice
- 1 cup chicken broth
- 1 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper (optional, for heat)
- 2 tbsp olive oil or vegetable oil
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
- Cooked rice, for serving
Instructions
Step 1: Heat the oil in a large skillet or Dutch oven over medium heat. Add the sausage slices and cook for 5-7 minutes until browned and slightly crispy. Remove the sausage from the skillet and set it aside.
Step 2: In the same skillet, add the chopped onion, bell pepper, and garlic. Sauté for 3-4 minutes, until the vegetables soften and become fragrant.
Step 3: Add the sliced okra to the skillet and stir. Cook for 5 minutes, allowing the okra to soften and release its natural juices.
Step 4: Add the diced tomatoes, chicken broth, tomato paste, paprika, thyme, cayenne pepper (if using), and salt and pepper. Stir well to combine, then bring the mixture to a simmer. Cover the skillet and cook for 15-20 minutes, stirring occasionally.
Step 5: Once the okra is tender and the flavors are well combined, return the sausage to the skillet and add the shrimp. Stir to mix everything together and cook for an additional 5-7 minutes, until the shrimp are pink and fully cooked through.
