  • 12 oz (340g) spaghetti
  • 3 cups fresh spinach leaves
  • 1 cup sun-dried tomatoes (oil-packed), chopped
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (plus extra for garnish)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon black pepper
  • Salt, to taste
  • 1/4 cup pasta water (reserved from cooked spaghetti)

Instructions

  1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/4 cup of pasta water and drain the rest. Set the spaghetti aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the chopped sun-dried tomatoes and cook for 2 minutes. Add the red pepper flakes if you prefer a spicy kick.
  4. Pour in the heavy cream and stir gently. Allow it to simmer for 2-3 minutes until slightly thickened.
  5. Add the grated Parmesan cheese, stirring until it melts into the sauce. Season with black pepper and salt to taste.
  6. Toss the fresh spinach into the skillet and cook until wilted, about 1-2 minutes.
  7. Add the cooked spaghetti to the skillet and toss to coat evenly with the creamy sauce. If the sauce is too thick, stir in the reserved pasta water a little at a time until the desired consistency is reached.
  8. Garnish with extra Parmesan cheese and serve immediately.
