Ingredients
Scale
- 2 cups dried split peas
- 2 cups cooked ham, diced (leftover ham works great!)
- 6 cups chicken broth
- 1 onion, chopped
- 2 carrots, peeled and chopped
Instructions
- Step 1: Rinse the dried split peas under cold water to remove any debris. Place them into the bottom of your Crockpot.
- Step 2: Add the diced ham, chopped onion, and chopped carrots to the Crockpot with the split peas.
- Step 3: Pour the chicken broth into the Crockpot, ensuring all ingredients are covered. Stir to combine.
- Step 4: Set the Crockpot on low and cook for 6-8 hours, or until the peas are tender and the soup has thickened. You can also set it on high for 3-4 hours if you’re short on time.
- Step 5: Once the soup is done cooking, use a spoon to break up any large chunks of ham. Taste and adjust the seasoning, adding salt and pepper as needed. If you like a smoother texture, you can use an immersion blender to blend the soup slightly, but this is optional.
