  • 1 teaspoon dried thyme
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce (optional for extra depth of flavor)
  • 3 large carrots, peeled and cut into chunks
  • 34 potatoes, cubed
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons cornstarch (for gravy, optional)
  • 2 tablespoons water (for cornstarch slurry, optional)

Instructions

Step 1: Prepare the Roast

Start by trimming any excess fat from the beef chuck roast. This helps prevent the dish from becoming too greasy. Pat the roast dry with a paper towel to ensure a good sear.

Step 2: Sear the Meat (Optional but Recommended)

Heat olive oil in a large skillet over medium-high heat. Sear the beef roast for 2-3 minutes on each side until browned. This step locks in the juices and adds a deep, caramelized flavor to the final dish.

Step 3: Season the Roast

In a small bowl, mix together salt, black pepper, garlic powder, onion powder, smoked paprika, and thyme. Rub the seasoning mixture all over the roast.

Step 4: Arrange the Ingredients in the Crock Pot

Place the sliced onions and minced garlic at the bottom of the crock pot. Arrange the carrots and potatoes around the roast. Place the seasoned roast on top.

Step 5: Add the Liquids

Pour beef broth, Worcestershire sauce, and soy sauce over the roast. These liquids will keep the roast moist and enhance its flavor as it slowly cooks.

Step 6: Slow Cook to Perfection

Cover and cook on LOW for 8-10 hours or HIGH for 5-6 hours. The roast is done when it becomes fork-tender and easily shreds.

Step 7: Make the Gravy (Optional)

For a thicker gravy, remove 1 cup of the cooking liquid and whisk it with a cornstarch slurry (mix 2 tablespoons cornstarch with 2 tablespoons water). Pour it back into the crock pot and let it thicken for about 5 minutes.
