- 2 slices of bread (sourdough, ciabatta, or whole wheat)
- 4 oz (about 4 slices) roasted turkey breast
- 2 tbsp pesto sauce (homemade or store-bought)
- 2 slices mozzarella or provolone cheese
- 1 tbsp mayonnaise (optional)
- 1 tbsp butter (for toasting)
- 2 slices tomato (optional)
- 1/4 cup arugula or spinach
- 1 tbsp olive oil (for grilling, optional)
- Salt and black pepper to taste
Instructions
Step 1: Prepare Your Ingredients
- Slice the bread, tomatoes, and cheese. If you’re making homemade pesto, blend fresh basil, garlic, Parmesan, olive oil, and pine nuts in a food processor.
Step 2: Spread the Pesto
- Spread 1 tablespoon of pesto on each slice of bread. You can also mix the pesto with mayonnaise for extra creaminess.
Step 3: Assemble the Sandwich
- Layer the turkey slices evenly over one side. Add cheese, tomatoes, and arugula or spinach. Sprinkle a little salt and black pepper for extra flavor.
Step 4: Grill or Toast
- Butter the outside of each slice of bread. Heat a grill pan or sandwich press to medium heat. Cook the sandwich for 2–3 minutes per side until golden brown and crispy.
Step 5: Serve and Enjoy
- Remove from heat, let it cool slightly, slice in half, and enjoy!
