  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) white beans (such as cannellini or Great Northern), drained and rinsed
  • 2 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the chicken breasts or thighs to the pot, cooking until browned on all sides.
  4. Stir in the ground cumin, chili powder, paprika, salt, and pepper, cooking for another minute to toast the spices.
  5. Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer until the chicken is cooked through, approximately 20 minutes.
  6. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  7. Add the drained and rinsed white beans to the pot, stirring to combine.
  8. Pour in the heavy cream or half-and-half, stirring until the chili is heated through and reaches your desired consistency.
  9. Taste and adjust seasoning as needed.
  10. Serve the white chicken chili hot, garnished with your choice of toppings such as shredded cheese, sour cream, chopped cilantro, or sliced jalapeños.
