- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons olive oil

Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the chicken breasts or thighs to the pot, cooking until browned on all sides.
- Stir in the ground cumin, chili powder, paprika, salt, and pepper, cooking for another minute to toast the spices.
- Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer until the chicken is cooked through, approximately 20 minutes.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Add the drained and rinsed white beans to the pot, stirring to combine.
- Pour in the heavy cream or half-and-half, stirring until the chili is heated through and reaches your desired consistency.
- Taste and adjust seasoning as needed.
